You can hardly blame him: working in a kitchen as he describes it is exquisitely joyless, its only reward being the camaraderie of the damned. Writing and appearing on television is much easier, though much less interesting to read about. Writing about other writers writing about food is even less interesting, even if the prose is enlivened by some perfectly judged swearing.

Richman showed an almost psychotic lack of judgment in his choice of words, but these are scores being settled. Other chapters include one about a chef failing to win Top Chef , an American television programme in which chefs compete against one another to become, well, top chef. Here he betrays everything you hoped you knew about him:.

And exactly why: a failure of imagination, a failure of technique or strategy, maturity or experience. Elsewhere he is terrific. In one chapter he watches a man called Justo fillet and prepare lbs of fish for Le Bernardin, the New York seafood restaurant, and his love for his subjects — both the food and the cook — sings as it once did in Kitchen Confidential. On the underside, another, thinner one.

The perimeters of each wing bristle with little bones and between the top and bottom fillet is a barrier of thin, flexible, dangerously translucent, cartilaginous spokes, like the buttress of a church — and about as unpleasant to bite into. He is a fine and knowledgeable guide to the delights of eating Pho a Vietnamese beef noodle soup in Saigon, and gets heated about vegetarians and anyone who treats meat with ammonia, a common practice when recovering meat for cheap hamburgers.

He will be missed, as trite as that sounds. I truly recommend Medium Raw. August 7, - Published on Amazon. I love watching all of his shows and I read Kitchen Confidential many years ago.

He has a beautiful style of articulating his thoughts, and then mix those eloquent prose with his off the cuff, borderline inappropriate, honesty and it makes for really good stuff. This book had some very interesting parts, but it doesn't follow a storyline. Once you read the book you realize how accurate the title is. I'm glad I read the book and wouldn't necessarily discourage anyone from reading the book so long as you know what it is going in.

His style of writing still shines. July 19, - Published on Amazon. This is a great read and honestly one of the best types of books I've ever read. If you're familiar at all with Bourdain, you can read this book and hear his voice in your head.

He writes exactly how he speaks and that can range from the profoundly prolific and poetic to the downright dirty and debaucherous. The book is aptly named. If you'd like to have a deeper peak inside the more mature, more worldly, ever wanderlustful and sometimes travel weary man who is Anthony Bourdain, I highly recommend this read.

Bourdain's I have read; the first was Kitchen Confidential. I loved them both.

Both were extremely irreverent and fun to read, and I finished this one with an new understanding of how hard the men and women in the restaurant kitchens of our country work. Bourdain allows the reader access to the many wild and hectic kitchens he has worked in, but he also gives us a glimpse of the other more personal parts of his life. I think I will always carry in my mind the image of his dancing with his little daughter at her preschool, she in a pink tutu, and he towering three feet above her and enjoying every minute.

He was the only father who showed up that day. Without having read Kitchen Confidential, this book would mean a lot less although still be awesome. As a reflection of what Bourdain is versus what he used to be, it's phenomenal. No longer cooking, Bourdain discusses with much humor the world of celebrity chefdom. The best part about the book is listening to the author read it.

A lot has changed since Kitchen Confidential - for the subculture of chefs and cooks, for the restaurant business-and for Anthony Bourdain. Medium Raw explores these changes, moving back and forth from the author's bad old days to the present.
